"What is Polywrap" docs section

Based on recent conversations with a potential partner organization we were asked to provide insight on how Polywrap actually works. They're interested in knowing how are transactions sent, who signs, what are wraps, are they locally executed? is it more like a remote service?

That made me realize that that's a missing piece of information that external people are asking for. And we should consider making that section and add it to our docs.

I started with an initial diagram and I'd love for us to expand on it
