Restore PHP 8.0 support for Symfony 6.0 LTS

Symfony 6.0 LTS supports PHP 8.0, so keep it in the matrix for testing.

Test matrix for symfony-6:
- PHP 8.0: Symfony 6.0 LTS (lowest - compatible with PHP 8.0)
- PHP 8.1/8.2/8.3: Symfony 6.4 LTS (highest)
